Ingredients
- 1/3 cup black beans
- 1 tomato sliced and diced (~2 Tbsp tomatoes, diced)
- 1 tablespoon onion, diced
- 1 teaspoon lemon juice
- 1/2 ripe, fresh avocado, halved, pitted and peeled
Instructions
- In a bowl, combine black beans, tomatoes and onion. Squeeze in fresh lemon juice.
- Serve in fresh avocado half.
