Citrus Vegetables

Ingredients

  • 4 cups mixed vegetables (such as zucchini, corn, and tomatoes)
  • 2 tablespoons fresh lime juice
  • 1/2 tablespoon olive oil (or cooking oil of choice)
  • 1/2 teaspoon fresh oregano, chopped

‍ Instructions

  1. Wash hands with soap and water.
  2. Slice vegetables and steam in a small amount of water.
  3. Drain, and place in a bowl to cool.
  4. Mix lime juice with oil. Add oregano and combine.
  5. Pour lime juice mixture over cool vegetables and mix well.
  6. Serve.
