Baked Fish Tomatoes Peppers Onions

Ingredients

  • 1 pound cod fillets, fresh or frozen, skinless and thawed (or other white fleshed fish)
  • 1/4 cup green bell pepper, chopped
  • 1/2 can (14.5 ounces) low-sodium tomatoes (about 8 ounces)
  • 1/4 cup onion, chopped
  • 1/4 teaspoon oregano

‍ Instructions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 °F. Oil or spray a 9 x 13-inch baking dish with vegetable spray.
  3. Cut fish into four pieces and place in baking dish.
  4. Top fish with green peppers, tomatoes, onions and oregano. Bake about 20 minutes or until fish flakes.
