Myplate Cnpp/Fiesta Stuffed Avocado

Ingredients

  • 1/3 cup black beans
  • 1 tomato sliced and diced (~2 Tbsp tomatoes, diced)
  • 1 tablespoon onion, diced
  • 1 teaspoon lemon juice
  • 1/2 ripe, fresh avocado, halved, pitted and peeled

‍ Instructions

  1. In a bowl, combine black beans, tomatoes and onion. Squeeze in fresh lemon juice.
  2. Serve in fresh avocado half.
